Once upon a time (just over 7 years ago), a 19-year-old version of myself married the man of my dreams. Right from the start, I gladly volunteered to be in charge of cooking. Especially because that meant HE was in charge of cleaning 🙂 My cooking skills, however, were… somewhat lacking. Mostly because I didn’t really try.

One day, we went grocery shopping together and found a giant box of 60 frozen chicken patties. They were a steal of a deal, so I grabbed a box and headed home to make dinner. Welp, we ate those horrible patties 3-4 times a week for the next couple of months, and if I never eat another one in my life, I would be just fine. Thankfully, my new hubby was too kind to complain, but I’m sure he was just as sick of them as I was!

After that, I decided I better learn how to cook, or we’d be doomed to a life of frozen foods. I strapped on my apron and went to work. And guess what? Turns out cooking isn’t so bad! Fast forward 7 years later, and I love cooking and even experiment with new recipes of my own. Who would’ve thought? Not my 19-year-old self, that’s for sure.

Once I stepped past the microwave, things got a whole lot more fun – and delicious! They also got a whole lot messier 🙂  But I’ve got good news for all you mess-makers out there, Colgate-Palmolive Company just came out with their new Palmolive® Fusion Clean™ Dish Soap, and it’s awesome!

There are 2 scents, Lime and Grapefruit, and they are each paired with baking soda. I’ve tried them both, and they smell so good, and work great. I hate doing dishes, probably more than just about anything, so having a soap that can dissolve food that’s been stuck on there for more than a day? Yes, please! (Not that I’d ever leave dirty dishes out or anything…)

So don’t be afraid to get down n’ dirty in the kitchen, because making messes can be a heck of a good time. Just ask my 2-year-old 🙂

Delicious and easy recipe - avocado chicken burritos!

This recipe I’m sharing today is so simple, even first-time cooks can get it right! All you need is some shredded cheese, avocado, salsa, tortillas, and chicken. I like to buy a rotisserie chicken to use in these burritos because it’s so quick and easy.

Just shred the chicken and mix it with the salsa. Then layer the avocado, chicken/salsa, and cheese on a tortilla. Roll that baby up, grill it, and you’re good to go.

These are SO good, and you’d never think they are so easy to make. They are so gooey and flavorful, and have become a family favorite around here.

Avocado Chicken Burritos

Ingredients
  • 4 flour tortillas
  • 2 cups chicken
  • ½ cup salsa
  • 1 ripe avocado
  • ¾ cup cheese
Instructions
  1. Mix salsa and shredded chicken in a bowl and set aside.
  2. Scoop out the flesh of the avocado, and mash it till it's creamy.
  3. Smear ¼ of the mashed avocado onto the center of 1 of the tortillas. Top with ¼ of the salsa/chicken mixture, as well as ¼ of the cheese.
  4. Fold in the sides of the tortilla, and roll it up into a burrito.
  5. Cook for 8-10 minutes on an electric grill or panini press.

    Oh my gosh, the pregnancy probably has something to do with it, but that just made me so hungry. I’m now in desperate need of avocados. 🙂
